Pear & Sour Cream Slice by Sue Burns
“My grandkids always request I make them this pear slice and I am very happy to oblige – think we enjoy it just as much. They inhale it, it disappears so quickly and they keep coming back for seconds and thirds”.
A quick slice or dessert to impress your guests or family.
This recipe has been adapted to be suitable for the failsafe diet and has traditional and Thermomix methods. You can find the original recipe here.
Traditional Method
1 x 340g vanilla cupcake mix *
3/4 cup butter or nuttelex, melted and cooled
400g tinned pear in syrup, drained and chopped
300g sour cream
Pre heat oven to 180 degrees. Lightly grease and line a 18 x 28cm baking tray with baking paper.
Combine the butter or nuttelex and cake mix together. Pour into prepared tin and spread evenly. Bake for 15 minutes.
Stir the chopped pear through the sour cream. Pour over the base and smooth evenly with the back of a spoon.
Bake for a further 15 minutes.
Allow to cool slightly before placing in the fridge. Serve chilled.
Thermomix Method
1 x 340g vanilla cupcake mix *
170g butter or nuttelex
400g tinned pear in syrup, drained
300g sour cream
Pre heat oven to 180 degrees. Lightly grease and line a 18 x 28cm baking tray with baking paper.
Place butter or nuttelex into Thermomix bowl. Melt for 2 1/2 minutes 60 deg speed 2. Add cake mix, mix on speed 3 for 10 seconds. Pour into prepared tin and spread evenly. Bake for 15 minutes.
Place drained pear halves into Thermomix bowl and chop on reverse speed 4 for 2 seconds. Add sour cream and combine for 10 seconds on reverse speed 2. Pour over base and smooth evenly with the back of a spoon.
Bake for a further 15 minutes.
Allow to cool slightly before placing in the fridge. Serve chilled.
* Vanilla cake mix – some home brand ones are ok and the White Wings. Always double check ingredients.
