Welcome to the Aug / Sept 2021 edition of the newsletter!
This month, the focus is on leeks. They become a staple in failsafe cooking to replace onions, it becomes an easy swap in basic recipes. One thing I didn't realise is the wonderful nutritional facts about leeks and how good they are for us! Leeks are a great source of vitamins A, K and C, as well as folate and fibre. Leeks pair well with chicken and potato, I have tried not to bombard you with the usuals like "leek and potato soup" which have featured in the newsletter many times over the years. Hopefully the recipes below will inspire you to use leeks in new and exciting ways to spice up your failsafe cooking.

Asthma week is held from 1-7 September in Australia annually. I am sure all of us know someone that has asthma. It can be triggered by many things, although food and environmental factors are the most common. My daughter and I have asthma. I discovered most of my environmental triggers when first diagnosed as a teenager, and only discovered the food triggers once we investigated the failsafe diet for my son when he was little, over 15 years ago. LEEKS

The leek is a sister plant to onion and garlic, and like those incredible nutrient-rich foods, leeks offer a whole host of health benefits.

LEEK TART
Martha Stewart: Store-bought failsafe pastry from the freezer makes the buttery base for the leek tart. A quick and simple light lunch or meal. Leave out pepper for strict failsafe and add fresh chives for more flavour or garnish. [recipe link]

LEEK PATTIES (KEFTES de PRASA)
West of the Loop: Keftes de prasa, or leek fritters is one of those dishes that is beloved throughout the Sephardic world, especially Turkey, Greece and Romania.
* Ensure you use failsafe oil, leave out the pepper and skip serving with lemon wedges for failsafe. Instead serve with a suitable failsafe sauce.

Food additives and Asthma

The Asthma Australia web site has a wealth of information if you or a family member suffer from asthma.
Some asthma triggers can be avoided. These include:
  • Inhaled irritants like cigarette or wood smoke
  • Perfumes and cleaning products
  • Allergens from pets, dust mites, moulds and chemicals
  • Workplace irritants, and pollen
  • Work related triggers
  • Dietary triggers (food additives and/or cold food/ drinks)
  • Some medicines and complementary medicines

A month after Jamie Oliver introduced additive free meals at Wingfield Primary School in London in 2003, teachers noticed that asthmatic children no longer needed their asthma medication at school. 'Unbelievable,' Jamie commented. 'I'm totally dumbfounded. That primary school, with little kids? ... you just change their food and then you don't have to be ramming all those chemicals and drugs down them.'

It's the same at the Food Intolerance Network. Over many years, we have seen that when families go on an elimination diet to help a child with behaviour problems, any asthmatics in the family are likely to improve as well. This is because the food chemicals that can be associated with asthma are the same as those that can cause behaviour problems in susceptible children.
  • Sulphites
  • Preservatives
  • MSG
  • Salicylates
Sulphites are the additives most associated with asthma.
